Normally, when we have left over idli/dosa batter, we always used to make kuzhipaniyaram for snacks in the evening to serve along with hot coffee or tea.
I was having a brinjal in the fridge and wanted to use the same so decided to make the subzi out of it and make the kuzhipaniyaram stuffed with the subzi. It was awesome when served along with coconut chutney.
Basically I do not write much about the recipes as I am very lazy to sit and write also have no much time to spare. Hence I am directing you to the recipe straightaway to try the same. I am unable to trace the picture of uttappam and kuzhipaniyaram as it was done few months ago. Have to search for it. shall post the pictures soon.

Let us look at the recipe now:
Ingredients:
1 cup idli/dosa batter
1 medium size brinjal finely chopped.
1 tbsp fresh grated coconut
1 medium size onion finely chopped
1 tbs green coriander chopped
a generous pinch of hing powder
1 green chilly finely chopped
1/2 tsp to 1 tsp red chilli powder
a generous pinch of turmeric powder
1 tbsp oil
1/4 tsp cumin seeds
1 tsp mustard seeds
salt
oil for making paniyaram
Method:
Heat oil in kadai. add the mustard seeds and cumin seeds. when it is done, add the hing powder, onion, green chilli and saute the same till the onion is done. add the brinjal, saute. add the masalas, salt, cover and cook. add the grated coconut coriander, mix well and keep aside.
Grease the kuzhipaniyaram pan with sesame oil heat the same. fill the hole half with dosa batter. put a tspful of subzi on top of it. put more batter to fill the hole. drizzle little oil around the paniyaram. cook till golden brown from both the sides.
serve hot with chutney sambar etc.
UTTAPPAM
Heat non stick kadai/dosa tava. grease the kadai with little oil. pour one laddleful of batter and spread to form the uttappa. spread the subzi on top of it. drizzle some oil, cover and cook. or you can pour batter again on top of the subzi and cook both the sides.
